
Food is travelling through your gut, but starch, protein and fat are far too big to get into your blood. Pick the right enzyme and fire it at each food molecule before it floats away: amylase and maltase for starch, protease for protein and lipase for fat. Work through the mouth, stomach and small intestine, watch the pH, and squirt bile to neutralise stomach acid and emulsify fat.
